Mum's Banana and Milo Loaf
October 15th 2009 22:30
Reading Risa's recipe on recipesroom.com the other day I knew my mum would love it. She makes various loaves with bananas in them and loves anything banana related. I sent her Risa's recipe and mum was very greatful for it but then emailed me straight back with one she had made that VERY morning of a banana and chocolate loaf for her B&B guests but this one used Milo. How cool I thought. I hate bananas but love banana bread or muffins so a request to mum has been put out there to make them for her visit next week. Now this recipe is over 20yrs old and she hasn't made it for ages. It was just such a huge and bizarre coincidence that mum made this the day I sent her Risa's recipe. The planets alligned for a day of banana and chocolate loaves
This one is so easy - it would be a good one to make with your kids if you have them or a quick and easy loaf to have made if guests pop in for a cuppa. Or in mum's case ideal to feed the B&B guests for morning tea. It also keeps the stepdad quiet as he loves all the sweet things mum makes
Pic courtesy of Google Images - mum never photographed it!!
You will need:
3/4 (three quarters) cup of chopped pecans ( I used hazelnuts as I didn't have the other)
3 old bananas - roughly chopped
1/4 (quarter) cup sugar
3/4 (three quarter) cup Milo
1 cup S/F flour
1/2 (half) cup Plain flour
1 tspn bicarbonate soda
3/4 cup oil ( I used olive oil - but maybe a veg oil or other will be okay)
1/2 (half) cup water
You will need to:
Combine first 4 ingredients in bowl of food processor - I used a hand held muncher that did the job. Process for a minute. Add flours, bi-carb, oil and water - process 1 minute. Spoon mixture evenly into greased and lined loaf tin. Bake in 180 degree (350 degrees) 45 - 50 minutes. Test with cake skewer. Enjoy.

Though it's the first banana-bread-type recipe I've seen without at least one egg?
No worries! I've got a big can of milo to use up!
Thank you!
