Slow Cooker Beef Stew

I finally had a weekend at home and as it was about minus one million degrees at home yesterday I decided on starting the day out by putting on the slow cooker. I have to be honest - this dish is senbloodysational - it is so mouth watering and has winter written all over it. It is cheap to make and for less than $20- I made enough to feed more than 6 people.
YOU NEED:
* 3 Tbsp oil - I used rice bran oil but any oil will do
* 1kg (2 lbs) chuck steak or gravy beef
* 1 cup chopped green capsicum
* 1 cup diced potatoes
* 1 cup sliced carrots
* 1/2 cup chopped celery
* 1 cup sliced onion
* 1/2 tsp salt
* 1 lg. clove garlic chopped finely
* pepper to taste
* 1 small can mushrooms - you could also use fresh but it's in the cooker for about 8hrs so will make no difference
* 1 can tomatoes - I used whole but would have preferred chopped
* 3 cups beef stock
* 3 Tbsp cornstarch or cornflour
* 1/3 cup barbecue sauce
* 1/4 cup cold water
YOU NEED:
1. Saute onion, pepper and garlic in oil. Add salt, pepper, barbecue sauce, tomatoes, potatoes, carrots, celery, beef stock and mushrooms.
2. Add the stew meat to the crock pot, cover with mixture. Cook on low for 8-10 hours.
3. Mix cornstarch and cold water, add to crock pot to thicken before serving
4. Serve with some crusty bread so you can wipe the plate clean and make Janet Collins pale at bad etiquette

I have frozen four meals and have a meal for two for Sammy and I at work on Wednesday plus got two meals out of it - so that is just brilliant if you want to save some money and enjoy a damn fine hearty meal. The BBQ sauce is the key to the flavour I think - let me know what you think. Special thanks to Mom's Who Think for the original recipe pre tweaking.

Not sure what made you think I was in the States, must be the accent I type with.
If you're in Sydney I'm only just up the road...about 800km. I live just south of Ballina.
I don't have a slow cooker...yet, so I'll be bringing the shoe horn for that shoe box

I visit Australia every so often because my husband is Australian, who's almost lived all over, except Sydney and Queensland. Born in Perth, lived in Tassie, lived in Perth again, lived in Adelaide followed by Melbourne.
If I ever make it to Sydney, I'll look you up...you can prepare my food on the front stoop and I'll eat it there.

Slow cookers are so cheap - u can get one at Target or KMart for about $50- - even cheaper in these end of financial year sales. So worth it - another way you could try is on low for electric stove for same amount of time - or I bought a diffuser I sit ontop of my gas burner - then have the gas on low and voila - it will have the same effect but would require an hourly or bi-hourly stir in the pot.

I used your recipe to do an "Oven Stew," and it was fabulous!
I baked it in a Dutch oven for the afternoon, at roughly 150°C. It's definitely a keeper!
