Stir Fried Beef and Bok Choy

Living on a massive budget this week but refusing to lower myself to the baked beans - ok - probably on the last night - I decided I needed to make a big meal that I could either eat every night for 4 days or dinner one night, lunch the next etc.
I wanted some flavour, I wanted something healthy and I wanted something I could put on the site that wouldn't embarrass me - I want you to be wanting to cook this meal. God I babble crap.
I had a lot of these ingredients already in the kitchen but they do not cost much and most of these ingredients you will then keep in the fridge for future stir fries.
There are some things I would recommend if you decice to cook this that I would do next time I cook this.
1) Add baby corn
2) Add mushrooms of some kind.
I chopped up a large onion in this recipe when I believe I should have used a small onion so it was quite onion heavy - I think a small onion and more vegetable would make this meal close to unbeatable.
YOU WILL NEED:
1) 1 tsp of rice bran oil
2) 1 onion, halved and sliced - suggest a small onion and purple onion for milder flavours
3) 2 cloves of garlic, crushed
4) 400g lean beef strips
5) 1 bunch of bok choy - leaves seperated and washed
6) 1/4 cup beef stock
7) 1/4 cup of oyster sauce
8) 1 tsp grated ginger
9) steamed rice to server
YOU WILL NEED TO:
1) Heat the oil in a wok or large frying pan over high heat
2) Cook the onion for about 3 to 4 mins, until tender, add the garlic and ginger and fry for 1min or until it's fragrant and you can hear the neighbors moaning at how nice it smells
3) Add the beef strips and cook for another 4mins or until the beef is nicely browned
4) Add the bok choy, stock and oyster sauce (if adding my suggestions of baby corn and mushrooms I would add them at this stage)
5) Simmer for 3mins - when the bok choy has wilted slightly it is time to serve
6) Serve with rice and a nice white wine to drink - YUM
Enjoy!! I had two dinners and one lunch out of it and I have to say - it improves the day after - once those sauces are marinated into the meat.
