The Best Potatoes EVERRRR

It has been ages since I posted an article on Sydney Table and I do apologise for that. I have been very busy with work and concentrating on Salty Popcorn when I have some spare time. Some good news is that Salty Popcorn now has its own radio segment on 91.3FM and this has been driving me crazy 
On the weekend I did a cooking night at great friend Karin's house with her, her friend Christine and her two most awesome kids, Stella Bella and the fatty boomba himself, who brought us the Anzac Day biscuit recipe, Finn.
I cooked a stroganoff which I will post another day but for months I have been asking Karin to teach me how to make her insanely delicious smashed potatoes and every time she cooks a big dinner for people these always come out as they are always a group favourite. Well this time I got the recipe and she is happy for it to be passed on so enjoy.
YOU NEED:
* About 8 spuds, normal variety and DO NOT PEEL them. Scrub if you get the dirty ones. Cut them roughly into slightly overbite sized pieces.
* Olive Oil
* Garlic granules or powder - DO NOT USE FRESH GARLIC, as it burns
* A nice mayo or Kraft's Salad Cream
YOU NEED TO:
* Boil the crap out of them in lots of water for 7mins - do not fret if they fall to pieces - you want them to
* Set an oven to 200degrees celsius
* Using a baking dish spray the bottom with olive oil spray or spread some olive oil on the bottom to stop them sticking
* Scrape out the potatoes and spread evenly over the baking dish - they may look slightly mashy and this is just how you want them to look
* Sprinkle the garlic granules over the spuds - I would probably sprinkle a bit of salt also but Karin says we get enough salt and do not need more
* Sprinkle a bit more olive oil over the spuds
* Bake for 40min and after 20mins get a spoon and break them up/ turn them over
* Serve them up with a bit of Mayo or Salad Cream lightly over the top and some parsley for garnish - dried parsley would be ideal
* Enjoy the hell out of them - they are so crispy and delicious.

I live in Taipei and I'm dying for Western recipes. I'm not quite used to eating Asian food on a daily basis although it's yummy!
