Yummy Breakfast

My biggest secret to losing weight is a big brekkie! Having all the protein and such a big breakfast is just what you want to start burning calories first thing. It helps if you have this after a big run or swim first thing but regardless of your exercise regime of a day this will provide you not only with abundant energy it will also have the entire day to burn off.
It was also such a treat having a commercial kitchen to cook in while at the Snowy Mountains with the parents that we went crazy with every meal
It is basic and most of you will already cook something similar occasionally but it is so yummy I had to share. The mushroom part of it I obtained from numerous cafes I used to visit for my old job when I was on the road visiting 20 cafes a day. The breakfast cafes had this as a regular breakfast side dish and the smell of it cooking always made my tummy rumble for some of them.
You Will Need:
PER PERSON
* 2 slices of rindless shortcut bacon
* 3 medium sized mushrooms - all chopped up roughly
* 1/2 a tomato
* 1 or 2 eggs
* 1 or 2 slices of toast
* chives (I just used the dry herb kind)
* cracked salt and pepper
* butter
* 1 or 2 garlic cloves for the lot - chopped finely or crushed
* a damn fine coffee
You Will Need To:
* either put someone else on toast duty and get them to make it all once you start the eggs (or make them all yourself and keep warm in the oven)
* start with the tomatoes and bacon in one pan. Place some butter in the bottom, put the bacon in and the tomatoes and sprinkle some chives on the tomatoes, also crack some salt and pepper onto them
* in another pan place a decent chunk of butter and once melted place in the garlic for a minute and then all the mushrooms - stir these regularly
* once the bacon is slightly browned on one side, turn them over along with the tomatoes
* this is also the indication to put the eggs on and get the toast assistant into action
* I like my eggs sunny side up but you could cook them however you want
* Once the eggs are done it should all be done so serve it all up on a plate and enjoy it!!
