Carrie's Fried Rice

One of my closest friends, Carrie, was bored at home the other night and we were talking on Facebook. She decided to whip something up with only what was in her fridge.
And here she came up with this delicious sounding Fried Rice. I would also suggest you throw in any left over veg - or some fresh broccoli, carrots, peas - whatever! Mix it up and enjoy!
YOU WILL NEED:
1 cup cooked rice (cooked day before)
1/4 green capsicum
1 shallot (sliced thickly)
1/2 birds eye chilli (sliced finely)
1 corn on cob (cooked then slice kernels off cob)
1 slice bacon (cooked and sliced)
1 teaspoon ginger
2 tablespoon soy sauce
1/2 tablespoon fish sauce
1 egg (beaten and then cooked in omelette and sliced)
1/2 teaspoon vegetable oil
YOU WILL NEED TO:
1) Cook bacon and put aside.
2) Cook egg omelette, slice and put aside.
3) Put vegetable oil in pan and fry ginger and shallot for 1 minute on medium heat. Once softened throw in capsicum, chilli and corn and lightly fry till capsicum is a little softened.
4) Add bacon and sliced egg into pan.
5) Add rice and mix all ingredients. Add sauces and mix through. Toss and fry for a couple of minutes till all cooked. Serve.
