Slow Cooker Chilli and Brandy Beef with White Beans

Totally delicious and hearty slow cooker meal that made me want to devour the entire contents of the slow cooker in one sitting. Intensely tasty flavours and the brandy makes the meal. And VERY easy!! It also comes in close to being one of my fave meals from the slow cooker.
I also know my meats, let me tell you, pretty sure I made the butcher cry after letting him know he had just diced for me 1.2kgs of rump when I had ordered chuck steak. I then saw a look of death from the guy's boss. Hope he is still employed
But not cool at $21- a KG for rump and $16- a KG for chuck. It really hurt me buying more ingredients from Coles to see their chuck was only $9- BOO me.
So all up this meal cost me $30- and will serve 4 people for a hearty winter meal. I did buy all the best ingredients and had to buy a small bottle of brandy so you could definitely make this meal cheaper.
The original recipe came from The Women's Weekly Slow Cooker cook book but I have tweaked it just a little bit. Enjoy it!!
YOU WILL NEED:
8 shallots
1.2kg chuck steak (roughly chopped up)
3 cloves of garlic
1 long red chilli finely sliced (keep the seeds in you pussy)
3 medium roma tomatoes (diced)
2 tablespoons of tomato paste
1 cup of beef stock
1/4 cup of brandy
400gm tin of cannellini beans
some parsley
YOU WILL NEED TO:
1) Peel the shallots and half shallots lengthways
2) Combine shallots, beef, chilli, garlic, tomatoes, tomato paste, stock and brandy and mix well.
3) Cook, covered in a slow cooker (min 3.5L) on low for 8hrs
4) Add beans and cook, covered, in the cooker for a further 30mins on high
5) Add some chopped parsley and serve
6) I served with toast but would be ideal with crusty bread or some steamed spuds
