Slow Cooker Sundays: Chorizo, Chilli and Bean Stew

I am back!!! Did u miss me? Even know I was missing? Stupid internet was down for close to a month and I also started a new job that has been just great but it's a little more corporate so the hours and training have been ruining me. For the next two weeks I have 10X 8 hr days and throw in 3hrs of travel and I don't even want to eat when it's over let alone write a bunch of articles. But the good news is I no longer work 6 days a week and actually have weekends off. OMG - it is amazing and I get two days of sleeping in - I LOVE IT!!
I know it's Wednesday but I did cook it on a Sunday and Sundays are my slow cooker Sundays so enjoy it - definitely one of my favourites of late.
Again credit must go to the fantastic Women's Weekly Slow Cooker Recipe book. It's not exact to their recipe and it's tweaked a bit to my liking.

YOU WILL NEED:
* 1x TBSP of Olive Oil (I love my Maggie Beer olive oil)
* 1x LGE purple onion - coarsley chopped
* 500gms chorizo sausages sliced
* 4 big cloves of garlic chopped up
* 2tsp piri piri (or if you prefer dried chilli flakes)
* 1 red capsicum - (bell pepper if you're a yank
) - chopped coarsely
* 200gms of beans, halved
* 2x 400gms of cannellini beans, rinsed and drained
* 2x 400gms canned diced tomatoes
* 1/3 cup of chicken stock - that's 80mls
* 4 dried bay leaves
* Some parsley to garnish and sprinkle on the top
YOU WILL NEED TO:
1) Heat oil in a large frying pan, cook the onion and the chorizo, stirring, until lightly browned.
2) Add garlic and piri piri (or chilli) and cook until awesome and fragrant
3) Combine the capsicum, the different beans, undrained tomatoes, stock, bay leaves, and chorizo mixture in a minimum 3.5L slow cooker.
4) Cooked, covered on low for 5hrs then on high for one hour
5) Chuck out the bay leaves, sprinkle with parsley and serve with a tempranillo wine that will blow your sox off

I've borrowed the WW slow cooker book from a friend, but I think I am going to have to buy my own copy. There are lots of things that I want to make! Sounds like you're a fan too - should I get my own book??
