Yummy Basic Chocolate Icing

This is YUMMY and it is SWEET and avoid it at all costs if you are on any form of a diet . It is ideal on a chocolate cake and depending on your level of sweet-toothedness you can decide to use milk chocolate all the way through to uber dark chocolate couverture. I am on a race to become a diabetic with my sweet tooth so I went for cadbury milk chocolate in the recipe and actually found it bordering on way too sweet. Next time I will go with a 30% couverture and work my way to a 70%.

As for the cake - any damn chocolate cake you want will suit this great icing. Sometimes I will make one from a recipe and some times I am feeling very lazy so settle on a packet mix

There is a new packet mix I found at Coles that is very tasty and also gluten free. So I made Celebrate Health's Chocolate Chestnut Cake Mix that is Gluten Free and just divine! This is actually their suggested icing written on the pack and I just loved it so thought I would share

YOU WILL NEED:
* 2 cups of icing sugar
* 170gms of chocolate (melted)
* 3 TBSPs of milk
* 1tsp of vanilla essence

* 170gms of a lite cream cheese (softened)

YOU WILL NEED TO:
* Chop the chocolate finely and place in a microwave on medium for between 30sec and a minute - ensure it is melted through
* Mix the cream cheese with the icing sugar until nice and fluffy

* Add the rest and stir until nice and smooth - you could use a mixer if you prefer but I am totally old school and love using the wooden spoon

Then ice the cake and place in the fridge for a while to chill before putting on the pounds

Prosciutto, Lettuce and Pea Pasta Recipe

This is easily one of the nicest pastas I have cooked for ages. The original recipe is care of Stephanie Alexander but I have altered to my tastes and my flatmate ooh and ahhed the entire meal. It is a must to have a nice red wine with it and don't eat this one if you are on a huge diet

YOU WILL NEED:
* 6 slices prosciutto, cut crosswise into 1cm wide strips
* 2 tbsp unsalted butter
* 2 tbsp extra virgin olive oil
* 12 cos lettuce leaves, hard stalk cut away, leaves cut across into 3cm-wide strips
* 3 cloves garlic, sliced finely
* 400g pappardelle or thick fettucine
* 1 cup shelled peas
* 1 cup cream
* 1 or 2 tbsp of Piri Pir or dried chilli flakes
* 2 tbsp freshly chopped flatleaf parsley
* sea salt
* freshly ground black pepper
* grated parmessan or parmigiano-reggiano

WHAT TO DO:
Drain cooked pasta in a colander over the sink. Don't rinse it - the sauce-catching starch will disappear down the sink. As mentioned earlier, a few tablespoons of the cooking water can be used to thin a too-thick sauce.

1) In a wide pan, gently saute the prosciutto in the butter and oil just until the fat starts to run. Add the sliced lettuce and the garlic, cover the pan and cook gently for about 5 minutes until lettuce is limp.

Cook pasta. Drain.

2) Add the peas, chilli and cream to the lettuce pan, cover again and cook for 5 minutes until peas are tender. Uncover the pan and increase heat for 2-3 minutes until cream starts to thicken and deepen in colour. Toss in the drained pasta and parsley and season to taste. Toss to mix well and tip into a warmed serving dish.

Offer grated cheese separately.

Serves 4.

Enjoy - BLOODY YUM!!!

Slow Cooker Sunday: Honey Soy Lamb Chops

Many thanks go to the Women's Weekly Slow Cooker Book yet again for the base recipe on this one. Originally I was either going to cook slow cooked Osso Bucco or Beef Cheeks but realised I did not have enough time.

My flatmate keeps thinking I am trying to fatten her up but I just love the cooking smells of Sunday and this was the ideal meal for it. It is is so simple - quite affordable, quick to prepare and get cooking so I could keep on doing numerous domestic things.

The flavours are Asian inspired and I did not use the salt reduced soy - I went a dark soy instead and found it delicious.

YOU WILL NEED:
1/4 cup of soy sauce
1/4 cup of honey
3 crushed garlic cloves
1 teaspoon of sesame oil
2 red onions cut into thick wedges
Between 4 and 6 lamb forequarter chops (depending on how many people you are feeding)
5 sprigs of Rosemary
15g of melted butter
1 TBLSP of plain flour
Roast vegetables to serve - I used Kipfler potatoes, carrots and then nuked some peas

YOU WILL NEED TO:
1) Combine soy, honey, garlic and oil in a small jug
2) Line the base of your slow cooker with the onion
3) Top with the lamb
4) Pour the sauce mixture over the top of the meat
5) Line the top with sprigs of rosemary
6) Cook on low for 6hrs - after 5hrs and 15mins - put your veggies in the oven on 180degrees (tossed in olive oil and herbs of your choice of course)
7) Discard the rosemary, remove the lamb from sauce and cover in foil to keep warm
8) Combine the butter and flour in a small bowl - stir into the cooker and crank it to high - cover and leave for 20mins - this should thicken it enough
9) Serve it and cover the meat with the sauce
10) Await compliments and ooh ahhs

BEST Marinara Recipe in the World

Many will disagree and many will like it but I was cooking a marinara the other night for my second dinner gathering at the new place with flattie, Chrissie, and best mate Carrie who got to see the place for the first time.

I usually cook my own version of a marinara which is a sweet chilli and lemon myrtle variety. But this time I thought I would try something new and searched Google for the "Best Marinara Sauce in the world". This is what came up

Finally the house is unpacked and life is slowly resuming to some sense of normality but it's all changed for me now. New house, new job, new car, new flatmate, even my cat feels like he has changed in some way and become less feral .

I had the first official housewarming dinner party the other night with new flattie, Chrissie, and great friends Jack and Rosie. And I had a hankering to cook Pork Belly with an Asian influence as the christening dish

I am back!!! Did u miss me? Even know I was missing? Stupid internet was down for close to a month and I also started a new job that has been just great but it's a little more corporate so the hours and training have been ruining me. For the next two weeks I have 10X 8 hr days and throw in 3hrs of travel and I don't even want to eat when it's over let alone write a bunch of articles. But the good news is I no longer work 6 days a week and actually have weekends off. OMG - it is amazing and I get two days of sleeping in - I LOVE IT!!

It's been a long time coming but finally I have cooked something worthy of writing about. This dish is just sensational and is based on a joint recipe from Masterchef from last year where they made mystery boxes.

Totally delicious and hearty slow cooker meal that made me want to devour the entire contents of the slow cooker in one sitting. Intensely tasty flavours and the brandy makes the meal. And VERY easy!! It also comes in close to being one of my fave meals from the slow cooker.

I also know my meats, let me tell you, pretty sure I made the butcher cry after letting him know he had just diced for me 1.2kgs of rump when I had ordered chuck steak. I then saw a look of death from the guy's boss. Hope he is still employed But not cool at $21- a KG for rump and $16- a KG for chuck. It really hurt me buying more ingredients from Coles to see their chuck was only $9- BOO me

Slow Cooker Pea and Ham Soup

I am not the biggest fan of the pea and ham soup - I have eaten some that are so heavy and too salty for my palate that a lot of the time I just avoid them. But I really had a hankering for one yesterday and I am thinking it is the winter onset, I wanted something warm and hearty and with all my early morning exercising I think I needed something overly salty so voila - we have the Sydney Table slow cooker pea and ham soup.

Thankyou thankyou thankyou Materchef Mag for this amazing recipe. By the way I have a thing about the word thank you. As far as fact is concerned it is meant to be two words but I disagree - there are words in the dictionary that are just wrong and I believe thank and you should be thankyou.

Big congratulaitons go to Mike - the Stepdad - on winning the family Masterchef challenge for our week away in Thredbo. The deal was that Mum, Mike and Myself had to cook a main meal each on the trip and, of course, the competitive nature of us would ensure we judged and criticised in true Masterchef form. We have been playing Bolivia and Settler's of Catan all week so the competitive nature was running very high.

My god it's been a tough week relaxing and feasting first on the South Coast and recently on the half covered slopes of Thredbo.The parentals and myself have indulged in the treat of gluttony and despite my massive hikes each morning or during the day I have still managed to pack on some of those unwanted holiday calories.

I am dreading my return to Sydney tomorrow as it means back to healthier eating and a further increase in exercise and even worse - returning to work for "the man

The trip to Thredbo finally happens this morning but what a day was had yesterday - a veritable feast of gluttony sitting next to a bonfire on the water - it was true Jamie Oliver on-the-road-style.

Thanks to the Daily Telegraph and the sensational grandma with the heart of gold and fingers of culinary heaven, Maggie Beer, I have tweeked and changed a recipe for chicken roast to make it more to my liking and also to accomodate the ingredients I could dig out of mum's pantry.
