Australian Coronation Chicken

Way back in 1953, and the year my supermum was born, another special lady donned a crown and was Coronated Queen of England. For this Coronation there were many meals made in her honor for the feast that followed. One of the meals was Coronation Chicken. The original meal uses apricots and is a little more mellow. It also used cashews.

For my version of Coronation Chicken I used Mangoes and Hazelnuts both purchased fresh from the Grower's Markets at Pyrmont last weekend. This one is so different from Coronation Chicken but based on its theme that we could nearly call it Republic Chicken. This meal is very very quick and easy to make and can either be served as a salad and cold over a bed of mixed lettuce or warmed and over freshly cooked rice. Due to the freezing temps this week you can guess which one I went for. It is a fairly strong flavored meal so I was not a huge fan of also eating it for lunch the next day at work. The lunch meal would have been much nicer on the lettuce leaves. For summer BBQ's coming up this one would be perfect as it is different, it has a history and tastes bloody delish!!

Frying Chicken



For this one you will need:
* 2 large firm mangoes, deseeded, skinned and cut into strips or cubes
* 70gms sultanas
* 1kg of chicken (breast or thigh), cooked, skinned and also cut into strips about 1cm wide
* 200mls of mayonnaise (go the LIGHT version or the amazingly flavoured soy version)
* 1 and a 1/2 TBSP of curry powder - medium strength
* 1TBSP Mango chutney - I used my own one made (it's the last recipe I did)
* juice of half a lemon
* salt and pepper
* 100gms of your nut of choice - the hazelnuts went well but cashews or any nut really could be used

Coronation Chicken


You need to:
* Pre cook the chicken first in some olive oil or olive spray and then either allow to cool, by cooking it in advance, or keep warm for the warm salad version
* In a large bowl place half the mango, all the sultanas and chicken
* In a small bowl mix the mayo with the curry powder, chutney and lemon juice. Season this to your liking with salt and pepper. It should be noted this on its own makes a great salad dressing!!!
* Pour this over the chicken and add half the nuts and toss it all gently
* Transfer this to a large serving bowl ontop of either a green salad or boiled rice
* Garnish with remaining nuts and mangoes and ENJOY!!!

Great mix.. And I can eat all that is in the receipe. Nothing more salivating than a mango in chicken receipe. Scrummy. Taa K

You will like this one Mum - perhaps I can make it for Xmas lunch this year!! On a big green salad - something different.

Thanks Lara - the original was served as a salad but I had seen a recipe for it to be served hot with rice. Both good - but the mayo sauce heated up is a bit too much two days ruinning.
Salad = YUM - Yay to Summer!!!!
