Healthy Beef Stroganoff

Sorry for being such a constant slack ass on the writing front. I actually have a pinched nerve in my right elbow caused from bad posture while using the computer. Kicking back with your feet up, keyboard on lap and stretched right arm to table writing for three hours a day and playing World of Warcraft for about the same has caused something bad to happen to my elbow and now I am getting treatment for a lazy assed computer over-usage injury 
But I cooked this a few weeks ago at good friend, Karin's house and it was a hit - even the kids swallowed it all down so this is a good sign
The recipe was originally from THE BIGGEST LOSER BEST RECIPES cookbook and I have adjusted it to my preferences.
YOU WILL NEED:
* 1 tsp Olive Oil
* 400gms topside steak cut into strips
* 1 onion, halved and sliced
* 3 cloves of garlic crushed, or chopped very fine
* 1tsp smoked paprika
* 300gms button mushrooms, sliced thinly
* 1 cup of reduced salt beef stock
* 2 TBLSP tomato paste
* 1/2 cup low fat natural yoghurt
* 200gms cooked pasta of choice - but you want the bits, you don't want spaghetti. Small style like elbows or penne, nothing long
* 1/4 cup of chopped parsley
YOU WILL NEED TO:
* Heat the oil in a large non stick frypan over high heat
* Brown the steak strips in batches and set aside
* Reduce the heat to medium, add the onion and cook for 5mins until tender
* Add the garlic and paprika and stir for one minute until fragrant
* Return the beef to the pan with the mushrooms, stock and tomato paste
* Bring to the boil then reduce heat and simmer for 10mins
* This would be a good time to cook that pasta
* After the 10mins remove the pan from the stove and stir in the yoghurt
* Serve over the pasta and sprinkle with fresh chopped parsley and I recommend a dry red wine with this one

I hear you on the injury front. I torn my calf muscle playing volleyball last week and now it is a mass of bruise. Ouch!
Doesn't affect my typing, just my motivation ;O

Agreed on the drop in motivation. Can only do about an hour at the computer until my arm hurts - not good.

I put her mistake down to youth. (I can do that now I'm old..LOL).
