It feels like forever since I posted a recipe and it probably is 
But today I have two for you, I finally had a relaxing weekend off with nearly nothing on and was inspired to cook my buns off
This morning I decided to mix up the bacon and egg staple of Sunday morning and cook them in a muffin tin. It's such a beautiful morning out on the balcony watching the ocean and world go by. I wonder what the poor are doing? Oh wait - I am the bloody poor
YOU WILL NEED:
* A muffin tin (larger size)
* 2 eggs per person
* 3X rindless shortcut bacon slices per person
* butter
* brush to brush the pans
* One mushroom per person (or whatever extra you want to add, try blue cheese, chives, tomatoes - whateverrrrrrrrrrrrrrr)
* Herbs of choice (of course I went with Piri Piri)
YOU WILL NEED TO:
1) Heat the oven to 200 degrees
2) Fry your bacon about 70% to done
3) Lightly brush butter into each muffin section you are using
4) Wrap bacon around each section of muffin tin
5) Pop in your mushroom or additive of choice
6) Crack an egg into each section
7) Sprinkly with herbs
8) Cook until you are happy with the eggs for each person
9) Serve with fresh juice a coffee and the Sunday paper
10) Make sure your cat is enjoying the morning as much as you are
