Very Healthy Carrot, Sultana and Walnut Muffins

These are so delicious and I know they are good for me as I got the recipe out of the Biggest Loser Cookbook. Cook these as the alternative to Helen's cheesecake swirls that were originally created by Satan to test your resolve and gluttony These are low in fat but have a great taste. I had no batteries for my camera so I do thank the online pic I found.




You will need:

1 cup wholemeal self raising flour
3/4 normal self raising flour
1/3 cup of brown sugar
1 1/2 teaspoons of ground cinnamon (or use the cinnamon sugar if you want to sweeten them a wee bit more)
3/4 cup of orange juice
2 tablespoons of light sour cream
1 egg
1/2 cup of finely grated carrot
1/3 cup of sultanas
2 tablespoons of chopped walnuts (or use any nut that is chopped up if you prefer something different)

You will need to do:

* preheat oven to 180degrees
* Mix both types of flour, sugar and cinnamon (I recommend you sift the flour) in a large bowl
* In a seperate bowl mix the egg, sour cream and OJ
* Fold the juice mix into the flour mix, add the carrot and walnuts and mix well
* Spoon into a greased muffin tray and bake for 20mins

It states on the book it makes 10 muffins but my tray had 12 slots so spooned it into 12 and it worked fine!

Easy as and very simple!!
Tastes delicious and is great for snacks.

I must also thoroughly recommend The Biggest Loser Best Recipes book.
The meals are all so yummy and healthy.
Last night I cooked the Crisp Skinned Salmon with lemon and Baby Bok Choy - it was scrumptious.

They are so quick and cheap to make Tracy - this is something you could show kids how to make and the results are worth it. I would suggest you try 18mins instead of 20 - make them a bit more moist - I think Either that or I had my oven on a wee bit hot but I still loved them. And my friend Carrie devoured three of them over coffee after jogging to my house.

Hi Jason,

These look like a great low-fat, heatlhy snack. Warm muffins out of the oven are a fantastic treat - perfect for this chilly weather we are having.

I'll try not to tempt you with too many 'full-strength' creations.

OK, I'm hungry now - just as well I've got the remains af my last batch of muffins in the freezer. There should be two or three left (wholemeal, banana and walnut - they're too healthy for my teenager to wolf down).

I'll get the muffin out of the freezer, whiz it for 25 seconds in the microwave and I'll be set.

They are delish and you can post as many beautiful sweet treats as you like - I love them but they also love my increaisng spare tyre. I can't keep chocolate at home anymore as I eat everything staright away and can;t save until later.

My mum also reminded me this morniing I should have made more and frozen them. I only need one carrot as have all the ingredients here now so may end up making another batch or two this week sometimes.

Great idea Jason, you should always listen to your Mum. She might talk rubbish at times, but she would have lived long enough to learn some useful things.
Mothers know things you can't even imagine!
